Noma's reputation precedes itself these days. After being voted the world's best restaurant it has garnered lots of attention. Stil relatively young, Chef Rene Redzepi has brought an extraordinary career at places like the French Laundry, El Bulli and Le Jardin des Sens to its pinnacle at Noma. Diners all over the world are now clamouring to get a table. If you want to try eat here, start planning months ahead.
The finest Nordic produce, some of it foraged locally, all of it sourced at great and painstaking length is the cornerstone of the food here. The dishes emphasise place and season in startling ways that tell the most evocative sensory stories.
The Greenland musk ox, the seared lobster and wood sorrel with cauliflower and elderberries, the bone marrow fudge....I could go on and on.
The very spare dining room is comfortable but almost rustic in some ways, but in no way detracts from the food. The canalside vistas are rather lovely.
The chefs come and explain each dish here, a lovely touch and a great way to add to the 'story' behind each dish.
The canal location requires a bit of effort to reach from the city centre but it's absolutely wonderful.
